One of my favorite comedic barroom brawls is from The Great Race. “Now will you give me some fighting’ room?!”

When the Amigos walk in to the bar in Mexico, and are mistaken for the killers the German mentioned before.... and EVERYONE in the bar except the Amigos is just waiting for the shooting to start (again....)

German Pilot, after his earlier bar brawl scene - "some friends of mine will be coming here, I hope you will show them more courtesy than you have shown me. they are not as kind-hearted as I am."

A great suggestion -- the intellectual barfight from Good Will Hunting -- https://www.youtube.com/watch?v=v9mC6Osykgo

Another issue when it comes to “subverting expectations” is ego. Some writers are so hung up on being praised for tricking the audience that they’re willing to throw in nonsense out of nowhere in order to surprise people.

For example, a story will constantly allude to an inevitable bar fight, but just as the protagonist is about to walk into the bar, aliens come and kidnap him. The audience says “Hey! Where is our bar fight!?” but the writer replies “Why aren’t you impressed? I subverted your expectations! You weren’t expecting aliens.” Then the writer gets upset for not receiving praise for their random aliens.

The duel/showdown, or "final showdown" as I've heard it called. Oh man, one of my favorites is in the movie Open Range with Kevin Costner and Robert Duvall. It's such a slow labored build, it feels like it takes forever to get to it and it is also so inevitable, and the movie is actually pretty slow for a western leading up to that scene, but man when it FINALLY happens it just explodes. So much action, like they saved it up and took it from earlier parts so they could use it all here at the end. Great explosive action and unique POV camera angles that make you feel like you're right there with those cowboys in that gunfight possibly about to get shot and killed at any second. So great :) I'm excited to read your western. I've actually never really read a western novel before. I had one once by Louis L'Amour in high school. I brought it on a boating trip with my grandparents and I remember accidentally dropping it off the dock into the ocean water, but thankfully it floated on the cover and I picked it up and wiped it off and it had no water damage. It was crazy. Alright... time for me to catch up on your story. I've been seeing the emails come in with new chapters and I've been wanting to listen to them but I haven't had time with seminary homework and other time commitments and family time, but today is the day.

Huh. When I think of a bar fight, I think of a big brawl, not just an act of violence that takes place in a bar. So maybe there's some violence inside a bar in each one of the the 'dollar trilogy' movies, but I can't say that I would consider that a requirement. Because I certainly don't remember any of it. I would rather say that some 'required scenes' for the genre might be advisable, but you're free to pick which ones, and can skip others. But that's just me. Maybe most others would be unsatisfied?
